Researchers from the University of Almeria have discovered that the combination of fresh vegetables in gazpacho is a powerful cancer chemopreventive agent. Cells (cultivated in vitro) with colon cancer were treated with digested gazpacho, and they discovered that this causes the cancerous cells to “kill themselves”.
